Apparently poached eggs on salads are all the rage right now. I’ve been noticing a lot of recipes for poached egg salads recently, and after I saw today’s Frolic post about it, I thought I should point it out. I actually adore poached eggs. They are involved in two of my favorite things to eat: eggs benedict (and most derivatives) and eggs on blanched asparagus. As the weather continues to get warmer and more summery, I plan on digging into many poached egg salads!
